So, where to start?? You'll need onions, olive oil, salt and of course a Baking Steel Griddle or even a cast iron pan will do. Okay, you can use a sauté pan but it's just not as FUN! This process is a marathon, not a sprint - slow and steady wins the race. You want those sugars caramelizing at an even clip, so medium-low heat, over a relaxed time frame is going to work well. Slow and low, that is the tempo!


  • 1 medium size onion, sliced thin
  • 2 ounces olive oil
  • 1/2 tsp sea salt


  1. Using your Baking Steel Griddle, warm the oil over medium heat for a few minutes. Add the onions and reduce your heat to low.
  2. Cook low and slow for 30 minutes, continuously stirring the onions. Once they get going, it's okay to step away from the stove for a minute or two, but don't wander off and take a nap.
  3. When your onions are golden brown and deliciously aromatized, remove them from the griddle. It's going to take a lot of will power to resist eating these babies straight away, but you can do it! Just think of how good they are going to taste on your pizza.
