So, where to start?? You'll need onions, olive oil, salt and of course a Baking Steel Griddle or even a cast iron pan will do. Okay, you can use a sauté pan but it's just not as FUN! This process is a marathon, not a sprint - slow and steady wins the race. You want those sugars caramelizing at an even clip, so medium-low heat, over a relaxed time frame is going to work well. Slow and low, that is the tempo!
- 1 medium size onion, sliced thin
- 2 ounces olive oil
- 1/2 tsp sea salt
- Using your Baking Steel Griddle, warm the oil over medium heat for a few minutes. Add the onions and reduce your heat to low.
- Cook low and slow for 30 minutes, continuously stirring the onions. Once they get going, it's okay to step away from the stove for a minute or two, but don't wander off and take a nap.
- When your onions are golden brown and deliciously aromatized, remove them from the griddle. It's going to take a lot of will power to resist eating these babies straight away, but you can do it! Just think of how good they are going to taste on your pizza.
